This rogaine will be remembered for its fantastic food, cooked by Cheryl Atchison.   

Cheryl's Mandarin & Almond salad (serves 6)

Lettuce and/or spinach

3 or 4 sliced green onions

1 can of mandarin oranges, drained

1/4 cup almonds (toasted if desired)

poppy seed dressing:

    3/4 cup white sugar

    1 teaspoon of dry mustard

    1 teaspoon salt

    1/3 cup white vinegar

    1 teaspoon dried onion flakes

    1 cup salad oil (such as canola)

    1/2 tablespoon poppy seeds

Put in jar with tight fitting lid & shake vigorously and/or stir.  Makes enough dressing for 3 - 4 batches.  Pour over & toss salad.

 

Cheryl's broccoli salad (serves 6)

3 cups of broccoli florets

1/2 cup red onion, diced

1/4 cup  pumpkin and/or sunflower seeds, roasted

1/2 cup raisins and/or Craisins

1/2 cup crumbled feta cheese

dressing:

    1/2 cup fat-free vanilla yogurt

    1/4 cup low-fat Miracle Whip or mayonnaise 

    2 tablespoons sugar

    1 tablespoon lemon juice

    salt & pepper

Mix the dressing well with a fork and pour over.  Keeps for up to 2 days.
